SOYBEAN

Soy noodles - a popular ingredient of Chinese, Vietnamese cuisine and also in other Far Eastern countries.

The Polish trade name is misleading, as this pasta is not produced from soy, but most often from mung bean starch, potato starch or sweet potato (eg Japanese harusame variety). After soaking in hot water or frying in deep oil, the pasta becomes transparent, which is why in English it is often referred to as "cellophane noodles" or "glass noodles", in German "Glasnudeln".
