Description

Miso - a paste whose prototype was "hishio" mass from fermented grains of cereals and beans with the addition of salt. It appeared in Japan around the 6th century AD. Today, a bowl of boiled soybeans "daizu" is produced, minced and seasoned with a fermenting paste "koji" based on "Aspergillus oryzae", wheat, rice and / or barley. The mixture matures to 3 years.
